Korean Spicy Pork Tacos

Korean Spicy Pork Tacos blend the vibrant flavors of Korean cuisine with the beloved taco format. These tacos feature tender, marinated pork, seasoned with a spicy blend of gochujang (Korean chili paste), garlic, and ginger, offering a savory and fiery kick. The pork is cooked to perfection, then nestled into soft tortillas and topped with crisp, tangy kimchi, crunchy shredded cabbage, and a drizzle of cool, creamy sriracha mayo. This fusion dish provides a deliciously unique take on traditional tacos, combining the best of Korean spice with the comfort of Mexican cuisine.

Ingredients:

For the Pork:

  • 1 lb (450g) pork shoulder or pork belly, thinly sliced
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup Korean red pepper paste (gochujang)
  • 2 tbsp soy sauce
  • • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sesame seeds
  • 1/2 tsp black pepper


For the Tacos:

  • 8 small tortillas (corn or flour)
  • 1 cup shredded cabbage
  • 1/2 cup sliced radishes
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges


Optional Toppings:

  • Sriracha or extra gochujang for heat
  • Thinly sliced green onions
  • Pickled vegetables


Instructions:

Marinate the Pork:

  1. In a bowl, combine gochujang, soy sauce, brown sugar, sesame oil, rice vinegar, garlic, ginger, sesame seeds, and black pepper.
  2. Add the sliced pork to the marinade, ensuring all pieces are well3. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.

Cook the Pork:

  1. Heat vegetable oil in a large skillet or pan over medium-high heat.
  2. Add the marinated pork slices to the pan in a single layer (you may need to do this in batches to avoid overcrowding).
  3. Cook for about 4-5 minutes on each side, or until the pork isbrowned and cooked through. Stir occasionally to ensure even cooking.
  4. Remove from heat and set aside.

Prepare the Tacos:

  1. Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat them in the oven.
  2. Spread a layer of shredded cabbage on each tortilla.
  3. Top with the cooked spicy pork.

Add Toppings:

  1. Add sliced radishes and chopped cilantro on top of the pork.
  2. Squeeze a lime wedge over the tacos.
  3. Add optional toppings like Sriracha or green onions if desired.

Serve:

  1. Serve the tacos warm with extra lime wedges on the side.
